Cooking: Lamb Chops With Spicy Salsa

Todays stop: Mexico  
- and maybe a nice idea for easter :)



Ingredients/Ingrediënten (for two): 

8 crumbly potatoes (scrubbed) / 8 aardappelen kruimig (schoongeboend) 

1 green bell pepper (diced) / 1 groene paprika (in kleine blokjes)

1 sweet onion (diced) / 1 zoete ui (in kleine blokjes)            750 g lamb racks/ 750 g lamsracks    
              
2 tsp ground coriander / 2 tl gemalen koriander                   1 tsp chilli powder / 1 tl chilipoeder

1 lime (scrubbed) / 1 limoen (schoongeboend)                     125 ml sour cream / 125 ml zure room

15 g coriander (chopped) / 15 g coriander (fijngesneden)    3 tbsp olive oil / 3 el olijfolie)


3 tomatoes (diced) / 3 trostomaten (in kleine blokjes            1/2 tbsp jalapeños / 1/2 el jalapeños 


Preparation/Bereiding (65 minutes):
1. Preheat the oven to 200 ° C. Put the potatoes in the oven for about 45 minutes.
Verwarm de oven voor op 200 °C. Leg de aardappelen ca. 45 min. in de oven.

2. Meanwhile, cut the lamb racks into chops and mix with the oil, ground coriander and chilli powder. Let marinate, covered, 30 minutes outside the refrigerator.
Snijd ondertussen de lamsracks in koteletten en meng ze met de olie, gemalen koriander en chilipoeder. Laat af­gedekt 30 min. marineren buiten de koelkast.

3. Meanwhile, grate the lemon and mix with sour cream and half of the fresh coriander. Squeeze the lime.
Rasp ondertussen de limoen en meng het rasp met de zure room en de helft van de verse koriander. Pers de limoen uit.

4. Mix the onion, tomato's, peppers, jalapeños, and the rest of the fresh coriander for the pico de gallo. Season with lime juice, pepper and salt.
Meng voor de pico de gallo de tomaten, ui, paprika, jalapeños en de rest van de verse koriander. Breng op smaak met limoensap, peper en eventueel zout.

5. Heat the grill pan and grill the lamb chops for 4 min. Turn halfway. If they do not fit all at ones, you can bake them in two parts. Keep the chops cooked in a dish covered with aluminum foil. Serve the chops with pico de gallo. Serve baked potatoes with sour cream.
Verhit de grillpan en gril de lamskoteletten 4 min. Keer halverwege. Als ze niet allemaal passen, kun je ze in 2 delen bakken. Houd de koteletten warm op een schaal afgedekt met aluminiumfolie. Serveer de koteletten met de pico de gallo. Serveer de gepofte aardappelen met de zure room erbij.

    1. To be honest I'm not really sure.
      I personally think it will tast very nice with chicken or something like that too, but I don't know.
      Let me know if you tried it with something els. I would love to now how it tasted :)
